Does anyone ever feel like they don’t eat enough veggies but also just don’t want to? I keep feeling like I haven’t been eating enough plants recently. So I started ordering a bunch of veggies from FreshDirect and sautéing them with a little EVOO S&P. Add a little brown rice cooked for 1 hour in chicken stock (so it’s nice and soft) and some sautéed shrimp, scrambled eggs, with some green onions on top. It’s very satisfying and super yummy.
